Stir Fried Quinoa

I'm not sure this dish I've dreamed up is truly "Stir Fried Quinoa" but I can't think of a better name so bear with me. This has quickly become a favorite quick and easy dinner around here and I feel good about serving it. 


Ingredients:

1/2 prepared Quinoa

1 cup vegetable broth
1 tsp Sesame Oil
Splash of vegetable oil (maybe 2-3 tsp)
4 eggs, beaten like you would for scrambled eggs
1/2 cup frozen corn
1/2 cup frozen peas
Salt & Pepper to taste

Optional - Soy Sauce to taste


Directions: 
Rinse the quinoa then add it to a pot with the vegetable broth. Bring it to a boil then reduce heat, cover and simmer for 15 minutes or until the grains have popped open and the water is absorbed.

Heat the oils in a large nonstick pan over medium-high heat. Add the egg and cook it well. I like to break it into smallish pieces using my spatula.

Add in the peas and corn once the egg is cooked. Finally, add in the cooked quinoa and heat everything together for a few minutes, stirring periodically to ensure everything cooks. Once the frozen veggies are heated through, you're ready to eat!!

Of course you can do more/better with the veggie choices but were working off of freezer options.
