Roasted Garbanzo Beans

A friend of mine with the blog Delicious Yet Nutritious wrote up a recipe for roasted garbanzo beans awhile back and it sounded like a great thing for us vegetarians to have on hand. I'm always looking for ways to sneak protein into our diets so I tried her recipe as it was written and found them to be really tasty but did a little experimenting tonight to see if I could get them even closer to meeting some of my pregnancy cravings which include crispy, but not too crunchy, spicy and a tad salty. Here's what I came up with:

Ingredients:
2 15-ounce cans of garbanzo beans
2 tsp Olive Oil
2 Tbsp Taco Seasoning

Preheat the oven to 400 degrees
Rinse and blot dry the garbanzo beans and spread in a single layer on a cookie sheet
Dry roast the beans for 30 minutes
Stir/shake/spatula them around 
Dry roast for another 10 minutes
Remove from the oven and turn it off (but close the door)
Pour the beans into a bowl and drizzle with olive oil and seasoning. Toss to coat. Put the beans back on the cookie sheet
Put it back in the oven (yes, the heat is off) for 15 minutes
Remove from the oven and allow to cool on the cookie sheet
